Lentil-vegetable pie | VeganSandra



I’ll have my lentils after the movie.


Basically your favorite pizza dough with thyme added (optional) and this cooked filling.


1 bigger zucchini
2 onions
2 garlic cloves
250 g green lentils
1-2 tbsp curry powder
a pinch of pepper
150 ml tomato juice
1 tomato
2-3 marinated pickles
vegetable stock powder, soy sauce or salt to taste
some oil for frying

Boil the lentils in a bland water until soft. In the meantime heat up some oil on a pan and add chopped onions. Fry until golden brown. Add grated zucchini, chopped garlic, tomatoes and pickles with tomato juice, curry powder and some vegetable stock powder, soy sauce or salt to taste. Simmer until the lentils are boiling. Drain the lentils and add them to the mix on a pan. Stir and taste. Add some seasoning if needed. Simmer until there’s not much liquid left.

Spread the filling on a raised dough and bake the pie in the oven at 200 C for about 30 minutes. I used leftover filling to serve with rice.
